who is the most noble character in naruto series? there are many but in my opinion the top three most noble characters should be
1. sarutobi hiruzen
2. uchiha itachi
3. namikaze minato

I think your confusing 'Noble' with 'Humble' Being Noble means that you belong to a High class of other Noble people, since we know nothing about Minato's clan it's doesn't really make sense to refer to him as Noble.

I agree with your list but hiruzen and minato both did the rds. Hiruzen allowed the uchiha massacre to happen also so if anything it's

Minato- sacrificed his soul.
Itachi- killed his family and lived as a traitor for peace.
Hiruzen- sacrificed his soul but also allowed genocide.
