Apparently Minato's base speed was incredibly quick. Not as quick as FTG, but still quick enough.

What are you going off of?

Going by his reflex feats when he fought Obito and Bee's tail, he must be great in taijutsu in general.

Maybe, though there is no need to over hype his general speed.

Minato needs a kunai when fighting with his bare hands and Itachi has the sharingan!

Minato wins even if Itachi is allowed Sharingan. Its been proven base Minato reflexes are even superior to V2 Ay. Minato wins medium difficulty.

The thing about the Sharingan is that the genjutsu can be avoid by simply not looking into the eyes. Maito Gai even said this was the technique he used when fighting Kakashi, and had applied this against Itachi as well.

Only speculation, but considering how intelligent Minato is (this was the guy who worked out in less than five minutes screen time how to defeat kamui) he probably knew about the weaknesses of Uchiha genjutsu as well.
