That's the point... Itachi has put every person he has faced in a genjutsu without them even realizing. Even his own brother that had the Sharingan was put in a genjutsu. Minato would not stand a chance against his genjutsu

This is true, but Minato has also never been hit or put under a genjutsu. The fight between the two of them is never going to end with one prevailing over the over every time. Intent, location, and knowledge play a bigger part in this fight than any other I can think of.
