Well, guy just tanked the orbs, which is just an advanced Jinton( 4 + elements). Jinton is just 3 elements.

Guy is the only ninja that can tank an atomizer.

Guy can only use Taijutsu, which means he has to actually touch the orbs in order to block them.
Besides, it clearly hit his back.

Jinton does not have classification such as being against ninjutsu, it atomizes everything; what makes omnyodon superior is its shape manipulation, the manipulation allowed Madara/Obito to have smaller ones (the orbs that float around them).

I know Madara can expand the orb, but when he used against Kakashi, he already shoot it out, so it was not in his grasp.

Because he was using the holy staff. Which is made from an Orb.

For unknown reasons, he is able to hold it. Maybe the staff is not an atomizer but just something imbued with Onmyoudon.

It only atomizes what it touches.

There was a large portion of the oil that didn't touch the orb.

No, he didn't say that.

He theorized that it's similar in the fact that it is composed of more than just 1 or 2 natures, and that it's dynamic shape makes it in one way, superior.

But Jinton dismantles particles of anything at an atomic level. (Atomization is different), it's superior. The Juubi Jin's malleable chakra isn't as powerful but has more different possible uses.

Jinton destroys everything on atomic level while the Onmyoudon only detroys ninjutsu based attacks.They are both destructive but Jinton completely obliterates the target.
