Alright, we'll give Mei the fight if she can surround herself in a dome of boil release (which doesn't disperse) before Minato can use FTG.

Sadly, his FTG is much faster, and i mean much faster than expelling Boil Release let alone shaping it into a defensive dome.

If he throws a Kunai, it might melt sure, but she will still be getting hit in the face by melted Iron, something that would hurt almost anyone.
