The situation favors Mei immensely but still, Sharingan can see chakra, and I doubt light is necessary for that. She will have to use the hidden mist technique right at the start. If she can do that, she wins. Itachi won't be able to use Amaterasu and Tsukuyomi because of the mist, and Susano'o will delay the inevitable. Itachi would eventually tire and the Acid Mist would melt him. Still, this all depends on Mei putting up Hidden Mist before Itachi decides to use Amaterasu. Even if she put it up before he could do anything, Amaterasu could possibly evaporate the mist.

The situation , due to the location does indeed seem bad for Itachi, but he has his chances, just as mei does... Mei's strongest weapon here is her Acid mist which unforgettably , as the name implies, is what it is, Mist, Mist being suspended water droplets (Kirigakure no Jutsu), The difference here being that there is also acid mixed into the equation...

Given Itachi's intelligence and aptitude in breaking down the weaknesses of jutus, he should be quick on the draw to start using Katons and Amaterasu in a defensive nature to keep intense heat present in the environment.. (Esp Since the knowledge is full, this should be the first thing he does ) , They start at 50m, so they should both be able to execute there jutsu at the same time. Itachi will be able to laydown an amaterasu which , Essentially will cause mei's mist will start evaporating , making the technique useless to use once especially once amaterasu starts spreading....It will create a bit of fog, but it will be more visible and should eliminate the dangerous aspect of the technique. You also stated the width and length of the cave is 100m , Meaning the cave is huge... much bigger than the one Sasori fought Sakura in ... in a 100m area, there is space to run , and the mist loses is deadliness since it will thin out over the wide area..

Once amaterasu starts clearing out the mist , Itachi has a number of options...Summoning crows to fill up the area and attack Mei as a distraction, simultaneously making 2 Bunshin Daibakuha and utilizing Itachi's amazing Body flicker speeds from different angles all while the main Itachi attacks from behind with his Shruiken Jutsu , aiming at whatever possible blindspots she has , it leaves no possible method for Mei to defend from all thse attacks.. and once the clones get into a close vicinity he can activate the explosions , which should definitely kill her , if she doesn't get impaled from the shruiken/Kunai..

No, I don't believe Susanno will be necessary here , and If for some reasons things do get intense, he can always bring out its full form to protect him.... and considering Susanno can move around without Itachi being inside of it , It turns this fight into a 2v1 battle that Mei can't win, not with Itachi's speed making him able to dodge most of mei's linear long range attacks , in such a wide area cave
