I don't know if its just me that missed something or what but why would he want to make himself vulnerable? As an edo he can never die, and has unlimited chakra. As a mortal, he will eventually exhaust himself. Now he has 4 top notch edo kages to deal with as well so its not like he'd be able to become the juubi jin a split second after reviving himself. He'd still have to fight them off which I highly doubt he could do as a mortal.

I wondered the same thing, but I guess it's because the Jubi has an insane amount of chakra.

To gain something, you must make sacrifices. He's pretty confident in his abilities ( we haven't even seen what he's fully capable of with his Rinnegan yet ), and plus if he would've became the Juubi's Jin he would literally become just as unstoppable as he was when he was an Edo.
Since Obito is the Juubi's Jin and judging by his reaction he still has a contingency plan in place so we'll see what he does soon enough. =D
