Most main characters in the Narutoverse have more stamina than Itachi. It's never been a secret that his stamina is not his strong suit. He's not a go charging into battle and **** the world up fighter like Naruto, Sasuke, Madara, Hashirama, etc. His fighting style is much more similar to Shikamaru's-assess your opponent, find their weakness, use your resources, and end it as quickly as possible.

Besides Itachi left the manga back when people could still run out of chakra. At this point everyone seems to have a near infinite chakra pool and if they don't they can just get chakra from someone with a near infinite chakra pool. Seriously after a fight with Juubi, Juubito, Juubidara, then Kaguya all back to back to back, I really don't think that there's any way Naruto and Sasuke should still be standing, much less fighting each other now.

Since "Prime Itachi" has never been tested, we can't conclusively assess his stamina.

The best measure is this: MS Sasuke (who was not sick) experienced heavy fatigue / bodily injury after maintaining an incomplete Susano'o for a relatively short amount of time. However, after Sasuke obtained the EMS, he became far stronger, and can basically maintain a completed Susano'o all day. He even appeared to coat Kurama with a "perfect Susano'o" after his Complete Susano'o had been previously destroyed.

If we take Sasuke's obvious, objective chakra boost after receiving EMS to be indicative of the chakra boost a typical EMS user can expect, relative to their MS self, it stands to reason that any EMS user (Madara included) would have far greater chakra reserves than any MS user. Plus, Sasuke and Madara are both Indra incarnations, and probably have more chakra/stamina to begin with.
