Sorry, it is never shown or said what eye Itachi stops it with(In the anime it was shown as both). While it is both said and shown in Sasuke's case. And it doesn't even matter either way, Stopping Amaterasu /= Manipulating Amaterasu. In the manga, Sasuke also stops Amaterasu with both his eyes just like Itachi in the anime, so there! Again, Manipulating does NOT equal Extinguishing the flames.

Btw, that's a Mangekyou Genjutsu, the same type that Madara used on Ei. All Genjutsu of the Sharingan are enhanced by the Mangkeyou. This is obvious.
