Looking back at the Training of the Monster Trio it really was amazing.
Luffy already had monstrous Haki which was displayed pre timeskip. To utilize it he got training by Rayleigh Shank's own teacher, someone most likely on the same level of Whitebeard. Luffy learned the basics of Haki and was helped to refine his fighting style. All the while Luffy was daily taking on monsters that severely fodderized him when he first arrived on the island. Luffy finished his Haki basics in a year and a half leaving him six months to train even further in that environment.
When Zoro first fought Mihawk he was taught the importance of grace in swordsmanship. (Mihawk handled him with a knife lol) Anyway Zoro pitted himself against a giant Mandrill that had perfectly copied Mihawk's peerless swordsmanship. This training allowed Zoro to sharpen himself against the strongest sword style and most likely tremendously improved his technique. From there Zoro was instructed personally by the world's strongest swordsman himself.
Sanji on the other hand spent his two years running away XD
I am just messing around, but he did spent these two years running and that exercise strengthened Sanji's legs to a point to where he can run on air and run through water at speeds that rival a mermaid. Sanji also took on an island full of skilled martial artists who had their bodies forged by the Kama Kenpo Cooking style. (Sanji most likely partook of this special cooking as well.)
I still don't get the point of Hell Memories though. It ignites his whole body, but Sanji only uses his feet :|
Also in terms of training. I gotta say that Luffy and Zoro had the best training which is understandable since Sanji is the Cook.
Anyway each of the Monster Trio is many times stronger than before. We don't even know how strong they r on the One Piece scale with the exception of Sanji who fought Vergo who was beyond Sanji's abilities.
