Law is currently my favorite character, but there are many aspects of the timeskip that are equally appealing. Sabo's return, which brings in the Revs to the story again and hints that their big roles will be coming out soon. Even without Law, we have the concept of pirate alliances by Kidd, Hawkins and Appoo. We have the Yonko coming in with Big Mom. We have more insight on the Tenryubito with Doffy, which Oda would have given in another way without Law. We have Luffy claiming Fishman Island, which brings in the concept of the Strawhats clashing with other pirates again. Fujitora brings the concept of revolution and change from within the WG. Doffy and Blackbeard introduce us to the Underworld Broking Business.

But a lot of that is a result of Law anyway. Law proposed the alliance spurring Kidd, Hawkins and Appoo to ally. Law decided to attack Doflamingo, sure Luffy would have done it eventually but it was Law who sparked it, which in turn leads to us learning of Doffy and Law's past. The Yonko comes because of Law's plan to attack Doffy.
