Itachi cannot win this fight with genjutsu when practically all of the Konoha 11 have knowledge on it (including finger genjutsu), whereas Neji, Hinata and Ino can detect when someone is under it and thus break them out of it. Smoke bombs and bug jamming also help to block line of sight, thus protecting them from Amaterasu, while the team can detect Itachi thanks to Byakugan/sensing, and Ino and Katsuyu relaying information.

With BM Choji, 5+ Gated Lee, Kiba, Sakura taking on Itachi in close combat, and, Shikamaru, Tenten and Sai providing support at a distance, Itachi is going to have his hands full defending himself. This also means that he is very likely to be set up in a trap to be caught by a Mind Transfer from Ino, who can use Hinata's sight to cast it from long range.

Susano'o isn't much of a problem either. The location allows the K11 to put distance between them and Itachi, whilst also still assaulting him with explosive kunai/tags from Sai's ink drawings, Shikamaru's Shadow Stitching, and Tenten, as well as Air Wall Palm. This allows them to force Itachi to keep his Susano'o up and drain his stamina, while successfully remaining out of the range of his attacks. Thus if they fail to breach his Susano'o with the combined might of Sakura + BM Choji + 6 Gated Lee + Cerberus Mode Kiba, and also fail to catch Itachi with a Mind Transfer jutsu, then they simply win via attrition by forcing him to drain his stamina with his techniques.

He can't from inside the forest. He needs to be somewhere where he can see the entire forest and not just the 10-20 trees around him. Not to mention him not having Enton so he can't actually manipulate it trap them. Him trying to cut off option of a team of ten with such a chakra taxing tech is foolish. Not to Mention that the team has ways to get around the flames.
