From reading the interview he wouldn't want to continue the story of Boruto because it would end the same as Naruto, and he makes perfect sense too.

Boruto, unlike Naruto, wants to take the same path as his master. Sarada, unlike Sasuke, wants to take the path of the Naruto. With Boruto you would have the same concept of character in the same perfect sense of enthusiasm, but he's not really Naruto at all. So Kishimoto would have a chance to showcase actual growth (for instance instead of Naruto being the same pervert he was in Pt 1 -- He would be a totally different character in Part 2, more mature an understanding.) He can actually do that with Boruto.

With Sarada, essentially she would be following the same path as Naruto. So even then her path would be even more redundant than Boruto's because we would have seen a story about a shinobi wanting to become a Hokage. So it all makes sense, in the end Boruto would be seen roaming through the woods, Sarada would be imitating a Hokage meeting, and then their would be a next gen children.

It would be horrible to continue the series just to see the same things happen over again

Yeah, too much of a good thing is bad for you.

We all saw the Alfheim arc in SAO.

Sometimes, you need to quit while you're ahead.
