My point is that Kishi never expanded on the paths ability.

I know what purpose each path serves but three of them hold the cognitive move of soul extraction.

Human path passively reads to extort information while hell path interrogates you to receive information.

It dosn't "interrogate" anyone, that was just Nagato (as the Hell path pain body) questioning people while threatening them with Hell path's abilities. It' the same as other pain bodies (like the summoning one) questioned people about Naruto's whereabouts. If they don't answer, they use their respective path's abilities and kill them. It has nothing to do with the hell path.

Naraka Path is the secret jutsu to extract and eat human souls and beckon (呼び出す, different from kuchiyose) the King of Hell. The rest just explains what we clearly saw; that when it grasps them they are weakened and can't resist, that if it eats their souls they die, and that it judges them, etc.
