Kisame wins high diff. Water Sharm Missile would absorb any attacks Kakuzu throws. If its False Darkness, it'd absorb its power and get electrically charged, bypassing Earth Spear if Kakuzu tries to use that to block. Kakuzu doesn't have the strength or speed to take out Kisame, but they're pretty much even in endurance.

It really would be. Though I think Kisame has a better arsenal and can drain Kakuzu of his chakra, making him weaker over time. I think Kisame takes this, high diff of course

Having a surplus of chakra is useless. Kisame will be defeated before he can utilize his full chakra pool.

And I don't see him draining a close-, mid- and long-range ninja like Kakuzu of his chakra either–which he has a lot of himself.

Kisame probably takes this. Kisame is the more powerful shinobi, especially in terms of jutsu
strength and chakra levels. The only thing that is a problem is that Kakuzu has all the elements which can be a pain for Kisame
to deal with especially the raiton.

How so? Kakuzu's fire can be easily intercepted by Kisame's water. Wind and Raiton would enhance any water attacks Kakuzu throws, and he hasn't shown any offensive Earth techs. Earth Spear requires close range. If he comes close to Kisame, that'd be end game. Kisame can absorb his Earth Spear in close range and in long range with Shark Missile. Killer Bee has reacted to and tanked faster and stronger opponents, Kakuzu doesn't have shit on him.
