Kisame could potentially defeat Itachi
Now before I begin I would like to point out that I'm fully aware of Itachis' superiority, I do however believe that Kisame could, even if its the slightest chance, beat Itachi. Hopefully guys that are tempted to call me retarded read this first.
Kisames' abilities, and how he could counter Itachi and maybe beat him.

Kisames' abilitys:
. First of all, I would like to begin with Kisame's water shark technique, and how he can injure and/or lower Itachis' fighting capabilty's. This allows him to create a giant dome constructed from water which traps the enemy inside, thus causing Itachi to drown. Now this technique is affective on more than one scale. One being that fused with Samehada, Kisame takes up the appearance of a shark. Now this allows Kisame to breath under water, and allows him to move at unparalleled speed, under water that is. If Itachi allows himself to get caught in that technique his chances of escaping are slim.
Killer Bee, who's one of the quickest shinobi in the NV was susceptible to this technique. Not to mention he had his Bijuu's cloak, thus increasing speed.

Bee had to use ink as a diversion, and still failed. In the end, Bee was lucky Samehada liked his chakra, and if not for that, Kisame would have won the fight. But back to my point, if a perfect jinchuriki with who has the support and bonuses of the Gyuki, then Itachis' chances are a lot slimmer. And please don't say ABC logic doesn't work here, because it does. ABC is relevant when it comes down to speed.
In the end, If Kisame can maintain and deprive Itachi of his breath, then things won't end nicely. As I'm being non biased I can also say Itachi can create a water or shadow clone to feint Kisame. Even the Byakugan couldn't detect the real Naruto. But my point still stands, this can be Kisames' trump card and even if Itachi escapes, he'll be tired and his already low stamina will decrease...
Samehada
The center of Kisames' fighting style all comes to his sword, Samehada. Samehada provides Kisame with various benefits; one being the consumption of chakra. This is especially affective on Itachi as his stamina is very low! 2.5 in the databook to be exact. Now Itachi would have to be very cautious about this as he cannot afford to lose chakra, considering his condition. If the two somehow manage to square up in a 1v1, Samehadas' effectiveness would lead Kisame one step closer to victory.

In addition to the latter, he is able to convert the stolen chakra into his own, regenerating his abilitys and stamina. This is highly effective on an opponent such as Itachi because of the already said reasons. Point being, Itachi has to stay away from Samehada, otherwise he's pissed.

Continuing the subject of Samehada's effectiveness. It is able to absorb Itachi's technique. While it may not like it, it doesn't have much of a choice. It could be used to handle Itachis' Katon. This has already been shown during the battle between Edo Itachi and Killer Bee.

Deflecting Itachis' large scale fire style attacks could be very beneficial in the closing moments of the fight, for sustaining injuries could hinder his remaining performance of the battle.
Continuing with fire based techniques we have come to Amaterasu. This is where I had trouble with but thanks to Draegod who I'll give proper thanks to later helped me come to a conclusion. Samehada might and just might be able to absorb it. It didn't like Itachis' katon but it wasn't stated that it couldn't handle larger scale techniques. Kisame could only hope for Samehada to absorb it and if not, he could feint Itachi with a water clone. Remember I'm trying to support Kisames' slightest of chances in this fight. Kisame is able to make water clones and in turn cannot be detected due to the even amount of chakra distributed between each clone. If Kisame can either pull off an feint with a clone, or have Samehada absorb it, it'll be fine. If Kisame can control the environment, as he did against Gai then he can confuse Itachi, giving him the slightest of chance. I need you guys to be open minded about this. Another counter to Amaterasu might be Water release: Great shark bullet. On top of the huge scale it covers, it allows Kisame to absorb ones attack, and in turn make his attack more powerful.
Susano'o
Itachis trump card... minimal counters are available but I will try and explain as best as possible. Now, Kisame was known as the tailless tailed beat; why? Because his chakra reserves were extraordinary and he simply never got tired. Kisames' best chance of overcoming Susano'o s by outlasting it. Kisame is capable of this and could in turn, wear Itachi out. Kisame could use 1000 feeding sharks to bombard Itachi, wasting the minimal time he possesses with Susano'o. Kisame, having huge chakra reserves could force Itachi to use his Susano'o to disperse of them. Furthermore I would like to point out that Great shark bullet could also come into play here. The only reason Gai emerged victorious was because he was a taijutsu users, thus great shark bullet wasn't able to absorb it. However, Susano'o is made purely of chakra and it was said that the larger the technique, the bigger it becomes. This could overcome Susano'o.

Genjutsu
Samehada is obviously capable of stealing ones chakra, and distributing it to its owner. I see no reason why Samehada cannot break Kisame out of Tsukuyomi, although if one is trapped it in, it's game over. However, an illusion is just that; an illusion. Samehada will be able to break Kisame out of it rendering Itachis' main genjutsu ineffective. I am unsure about this but it's the conclusion I have come to, please explain if you disagree. Since Itachis' fighting style revolves around genjutsu, if Samehada ensures Kisame doesn't get caught in it, then Kisames' victory chances increase. Itachi still contains a powerful ninjutsu arsenal so that may not be the case. However, this is surely a disadvantage and Kisame could capitalize.
