Kenjutsu techniques are those that imply the use of a sword or swords.Also while you can just use a sword,you can also enhance the power and damage dealt by the technique by combining kenjutsu with taijutsu,ninjutsu,chakra flow also in some rare cases genjutsu.Some of the best kenjutsu users are the Seven swordsman of the mist who have an unique sword each,Killer B who uses his unique multiple sword ken.And of course the Land of Iron solely relays on their samurai who only use kenjutsu to defend them.

Well besides the obvious not realy perhaps the Two-handed can deal more damage in one blow and the One-handed has better speed and mobility.

Yeah, but there's more to it of course

A One-Handed Slash is not as fast and less powerful than a Two Handed, however, it offers more maneuverability and allows for you to easily transition into follow up slashes. A Two-Handed slash is faster because of the additional force behind the blade and more powerful for the same reason; However, it offers less maneuverability and is harder to chain consecutive strikes after.
