Kenjutsu is the art of fighting with swords.

Many shinobi can learn it and although not exclusive to Kiri and Kumo, those two villages place greater emphasis on kenjutsu than do the other villlage. Specifically, Kumo has their own kenjutsu technique and Kiri has the seven ninja swordsmen of the mist.

Aditionally, kenjutsu is the primary fighting style of the samurai descended from the Land of Iron. The samurai are able to channel their chakra into their swords to enhace their power (it was notice that when Sauske channeled his chiodori nagashi into his blade that the technique bared resemblenced to the techniques of the samurai).

I'm talking about the way of the sword, what that is, not who can use it or the jutsu...

I looked it up online and I hope that this is what you were looking for:

The Way of the Sword, also referred to as Kendo, is a form of Budo, the martial arts.

As with all Budo, Kendo displays "discipline, consistency, and total commitment." Unlike other forms of budo, Kendo is more the developement of spirit and mind that it is of physical jutsu. Furthermore, Kendo forces the individual to recreate his spirit through endless training and effort. The actions of kneeling are passive but they are done in a way that the indivduals can still draw their swords. Users begin learning it by training relentlously in order to develope perfect technique. They soon after practice basic techniques thousands of times.
