It's not as simple as "one", but it's more like all of them are portions of the same entity.

I don't know if you remember, but in Chapter 652 was mentioned that both Tsunade and Sakura together could only summon one tenth of Katsuyu's body. This shows how huge she really is, that she actually covers the entire Shikkotsu Forest.
