Gaara's mom was not the previous jiinchuriki of shukaku,so she could not control sand. However she seemingly infused her will into the sand, and it protects gaara till this very day long after she died, did she use yinyang to infuse her will into the sand?

i first read "kurama" he have yinyang yes but karura is tough question + she is fodder no one remembers but all beast can do tbb which means they collect red and blue chakra to dense form and far as i know red and blue is yin and yang,

second tought shukaku use fuuton attacks not tbb so hard to say, your biggest clue/hint is whether his fuuin used yin and yang at any scale, there was curse mark + his body ......... quick answer she dont have yin yang release, its pretty rare afterall

This. Not a chance OP. Not a chance.

Then how can you explain the sand is still protecting Gaara, even after Karura's death and even after his Bijuu was extracted?

It's the same as Konan's paper and Minato/Kushina's reunion with Naruto. Karura's will (chakra) seeped into gaara's sand giving her control over it (like konan's paper) even after death using her consciousness (like minato and kushina in naruto's consciousness.)

That's the only "logical" explanation. The real explanation is that it's plot and there is no explanation. The fact remains that Karura never was the Jinchuriki of Shukaku.
