I am going to dumb it down:

Everyone is born with an element nature-type.

Kakuzu seems to be Earth.

Stealing a forbiiden jutsu, Earth Grude fear gave him the ability to steal other element natures.

Earth Grudge is already a earth-type jutsu that is able to use other elements types.

Kakuzu has five hearts: The basic elements are 5 elements (Fire, Water, Wind, Earth, and Lightning)

Edit: Mask each have the COLOR of what each elements have. Example: Red mask=fire, light blue color=wind, yellow mask= Lighnting. Baby Blue color= ??? (Common sense?)

Kakuzu lost his heart from Kakashi, and replaces his orignal heart (Earth) to replace it with (4th)??? Mask.

Conculsion: replace Water.

It's common sense that without his masks, he loses the ability to use all the elements except earth.

Since everyone has a chakra nature, his would be earth.

Even though the manga doesn't give us confimation on his earth affinity it still doesn't disprove his forbidden jutsu and what it is capable of doing.

His Earth Grudge Fear IS a EARTH JUTSU that is able to CONTAIN and STORE the OTHER Affinity. Thus making his 4th Mask Water.

Yeah, it's pretty obvious Kakuzu's last mask is a Suiton one. I figured we would see it in action when Kakuzu got revived as an Edo Tensei, but we still didn't.
