Full intel Kakuzu can interrupt Itachi using Amaterasu, much like how Sasuke did. Worst case, Kakuzu can sacrifice Jingou's while the heat detaches it from his body. Much like how Amaterasu did against Kabuto's webs.

Nothing indicates the masks are capable of complex thoughts such as genjutsu removal. Itachi has the ability to make his genjutsu appear like the real world. He can have Kakuzu in a genjutsu that mimicked what might happen in the real world, while he deals with the masks outside of Kakuzu's body. Masks are easy picking for Itachi given Itachi's abilities. Genjutsu is also works in the masks, as they possess chakra network and eyes.
Threads are as useless as can be when the flame is on Kakuzu's skin. If threads are used, they simply get engulfed as well. Kakuzu can't ever disrupt Amaterasu. Sasuke was caught every time Itachi used Amaterasu. Kakuzu has no way of perceiving or reacting to Amaterasu.
How the fight goes is Itachi using genjutsu at the beginning of the battle, picking up the masks effortlessly, and shitting on Kakuzu himself by Amaterasu.

I don't see how Kakuzu really takes Itachi down unless this is sick Itachi as he's faster than both Hebi Sasuke and Kakashi, Amertarasu may be countered but your webs example doesn't hold up as Itachi was aiming for only the webs in that scenario.

Hearts should break from Genjutsu though, Kakuzu was dead and they knew to return to his body and that is all they need to do here. Doubt Kakuzu would fall for too many genjutsu though.

In the end Amertarasu probably ends it however.

I wouldn't consider that as an extra perk because I'm already under the belief that he can use high level Suiton due to having compatibility with every element, so this doesn't make a difference for me. Kakuzu would have superior firepower when it comes to elemental clashes, but Itachi prioritizes more on speed, diversionary tactics, capitalizing on his opponent's faults which is why Itachi possessed the advantage over both Kakashi and Kisame, both of which would overwhelm Itachi in an elemental clash.

This is a no-brainer for me, Itachi still solos.

Well yeah Itachi can do it twice at best. While Kakuzu can produce more Jingou. Though with the second time, one of Kakuzu mask can blast him from underground, or back stab, once Itachi locks LoS of him.
