kakashi low to mid difficulty, itachi awoke his sharingan too early not to be dependent on it. He was shown using sharingan in absolutely every battle.

Kakashi, on the other hand, became a jonin before he got a sharingan, and fought evenly against jonins without it when he was a kid.

Itachi will simply be handicapped much more severely than kakashi when we take sharingans from both of them.

Itachi without his sharigan is a big handicap. The sharigan is a big source of his strength. Even though he is still good without it. I think Itachi would win solely on the fact that Kakashi would think that he is in a big advantage vs Itachi because hes not using his Sharigan. That would opening up counters for Itachi. Itachi is a fighter that constantly set traps. I can see Kakashi easily winning this though if he fought very smart.

Itachi doesnt have the sharingan this time to cast that paralyzing genjutsu. He has his finger genjutsu, but thats it.

1. itatchi without sharingan is a mere jounin
2. He trolls sharingan and without it would loose a large portion of his fights
3. Kakashi got to jounin WITHOUT! sharingan, itatchi is too dependant on his eyes
