I don't really think it would be high difficulty tbh. Have we ever seen Itachi fighting without Sharingan? I don't think. He relies too much on them. Without it, his reaction time is weaker, and his genjutsu also. He can't even use another ninjutsu apart from Katon, where Kakashi surpass him with a huge gap in this category. They are both smart, but i think Kakashi is smarter especially after seeing his recent feats, and he has much more experience in battle. It would be mid diff at best in my opinion

the uchihas ara nothing without their eyes...their sharingan is the only reason why people fear them...take out their eyes and they will be toasted...take out a lion's claws and teeth and it will be harmless...thus, they both have intelligence and speed...if u recall their fight, itachi won cuz of his sharingan...i'd say kakashi might win this one
