I really have to disagree with this. That anime would be boring as hell. If someone deserves an own anime than Sasuke. He travels through the world for years, I really wonder what he does and what kinda people he meets. He could be doing some heroic batman stuff. It would be great because he would redeem himself for many others.

It wouldn't be boring. It's just that it's already done.

There's nothing left for Kakashi. He's already done. His entire life has pretty much been given more explanation than 97% of NV.
