I hate the idea of immortality on general principles, so i always try and prove it's non existence in fiction, or prove that it is actually crippling. In this case, I am saying it's a weakness.

Kaguya believes that she can only be sealed, which leads to her underestimating her opponents. You know what happened last time she underestimated a pink haired girl who couldn't seal her.

Lack of immortality, or the illusion thereof, Would lead to her taking her enemies more seriously, and exploding sakura's brain with a chakra arm. Which i would pay to watch. If she got sealed, she would eventually die.

there's no reason to suggest Kaguya could not do the same. So, she's now back in the world in the form of chakra.

Chakra that can possess people. Chakra that can control people. Chakra that can turn them into Kaguya if they are weak enough.

If she is immortal, or thinks she is, She underestimates her opponents and can be sealed permanently.
If she is mortal, she takes her opponents seriously, and if she dies, can come back to life as strong as ever.

Immortality doesnot mean you inderestimate you opponents, arrogance and stupidity do.

I don't think kaguya was arrogant because of her immortality, she was arrogant because she thought "other chakra beings" pale in comparison to her. Basically, in her opinion, people with small amounts of chakra are not a threat.
