Haki CoO is for observation just like how sage Mode gives amplified sensing capabilities that u can feel the pple around u as Naruto did in the pain arc when he sensed Kakashi had died and kenboshoku haki was used by Rayleigh on that island to the powerlevel and number of living beings.
The Bosushoku part of sage Mode is that its the only thing shown that can harm Juubito when he is using that onymoudon or whatever techniques. Its different from intangibility I know but keep an open mind CoA is the best way vs logia which u could say take attacks like nothing and the onymoudon turns ninjutsu to nothing. Sorry for that Juubito techniques I mis-spelled.
