Just caught up on Tokyo Ghoul, Manga and Anime. Why so different?

it seems like the dialogue is watered down for the anime , less gore, and the time/order of things are flip flopped. Also in the Manga Jason kills a mother and child in front of Kaneki , but in the anime he kills a man and woman. Is it against the rules to kill Lil kids or something. in kanekis like mental world he gpes crazy and says I AM A GHOUL, WHILE DEVOURING rize but in the anime he just goes ..."i am a ghoul". How lame. DAMN you studio pierott!!
