Minato is too fast for most of itachis attacks but we've seen that itachi has excellent battle strategy so I'm torn. Haven't seen enough of minatos techniques to know..

Many people are putting Jiraya as the weakest, but remember Itachi wouldn't dare fighting Jiraya!

You can't be serious. Even if you ignore everything else, Itachi said he didn't want to fight because his eyes were tired from defeating Kakashi earlier and that they didn't need to rush to capture Naruto at the time. If you don't ignore everything else, then it's obvious why Itachi told Kisame that they shouldn't kidnap Naruto and leave Konoha in ruins.
