Starting out --- J-Man has Shima and Fukasaku in Sage Mode

2nd Scenario

Same thing but Itachi is healthy.

Sage Mode Jiraiya has great pain tolerance, and could seal the fire. That is if Jiraiya would get hit by it.

Sage Mode doesn't give pain tolerance, not like tolerance will help him here anyway. When he gets hit he gets burnt up just like this, he isn't sealing the flames either.

Saskue has better mastery over Amataseru than Itachi. Jiraiya has shown that he could seal Itachi's flames.

In my mind this is what happened though:

Shima uses "Sage Art: Wind Release Dust Cloud" that jutsu spits up dirt and grass to where you could cover Gamabunta, so Jiraiya has at least a couple of seconds to sneak an attack on him, or Shima can use another Jutsu.
Shima would then procede to use "Fighting Tongue Bind" a jutsu where the frogs tongue can find opponents without sight. It is a sensory type of jutsu that will immobilize the opponent. By this point Itachi is wondering what is happening in the dust.
Then Fukasaku would use a deadly technique called "Fighting Tongue Slash" This technique can cut through solid rock, and through skin apparently.

Logic shows us that Itachi stands no chance against the gokage. Jinton is a 1 shot. Onoki might be able to solo Itachi.

Because Madara is a beast? Yata Mirror has a weakness. Everyone said Gaara's defence was invincible, but Lee broke through it. Yata Mirror will get broken, I assure you. Just wait. Then Itachi fans will go cry in a hole and kill themselves.

Yata Mirror, specifically said to be immune to all elemental attacks because it is infused with them and able to alter it's form to counter them, will be broken by an elemental attack? I don't think so. The question remains, if Jinton is unstoppable, how did EMS Madara effortlessly beat Mu and Onoki... he didn't have the Yata Mirror even, and seems to have somehow lived... I await your explanation.

You've seen him fight with Susanoo twice, he only used it when he needed it and he can use Ribcage to tank that tongue blade if he wants.
Not to mention he started with Susanoo against Kabuto.

can go either way ..... and am being generous here (well ..... i like both of them). but keep in mind i don't like to twist the manga facts like some people, one of these two ran away when he saw the other (some people wana give other excuses to what happened from their heads) ..... but seriously no matter who wins this, it won't be easy U_U
