Naa, Itachi even admitted that the best he could do was a standstill. Off course he knew all his jutsu, and how Jiraiya would counter them.

No a battle bewteen Itachi and Jiraiya won't be as easy as you make out.
Jiraiya also has many powerful justu and can back up his hype as a memebr of the legendary sannin .Itachi is not a stupid man he would know if Jiraiya was just hype or was a real threat .You pointed out Itachi's powers now here's Jiraiya's strenghts.

1) Itachi may have the sharingan but he doesn't have a the reverses of chakra that Jiraiya does plus Jiraiya has faced many ninjas i'm sure he can deal with Itachi's jutsu.
2) Itachi's genjustu can be broken by the toad sages plus Susano'o is not indescribable look at Kabuto vs the Uchiha brothers Susano'o can't block sound, the toad sages most powerful genjutsu is a sound based genjustu.
3) Itachi can not copy his sage jutsu.
4) A battle bewteen Jiraiya and Itachi will not be quick it will be a long draw out fight which will favor Jiraiya as he has large amounts of chakra where as Itachi has little supply plus with Itachi's illness the more he's pushed the more it acts up.
5) Itachi's mangekyou sharingan causes blindness to Itachi and facing a powerful ninja like Jiraiya if his sight fades that's it for him.

If the two battled it's hard to guess who would win both are legendary shinobi and both knew amazing jutsu's .My guess is what Itachi himself said if the two did fight they would both end up dead and i believe that so a draw is my guess.

Honestly, at 2:08 in this video, is there really any shinobi besides Tobi and Minato that can survive that reverse toad mouth trap? it looks like you just have to be in the area to be caught in the reverse summon.

if i remember correctly, i wouldn't think that genjutsu would work on jiraiya because he did try to teach naruto how to counter genjutsu by disturbing his own chakra flow. just wanted to point that out.

the only person that was able to stop jiraya was pain and jiraya never wanted to fight pain..he was looking for the real pain. Itachi is a very smart shinobi he knows when to run and when to fight. he knew fighting jiraya was not an option. that was why he had use to run from the spot despite oders to capture naruto..very simple.. why are you making things so complicated

Every jonin knows that method.. Orochimaru tried it when itachi put him in the genjutsu... Itachi saw he was moving to put his hands together and cut his hands off..

Do note if itachi was out to kill he could just as easily cut off orochimaru's head instead....

Jiraiya should have more control of his chakra flow than Orochimaru seeing as Jiraiya got closer to mastering sage mode than Oro, Jiraiya can also use Rasengan at around the same level as Minato indicating great chakra control.

I'm not saying Jiraiya could tank a successful Tsukuyomi but his Genjutsu is much more effective than Tsukuyomi.

it was never about chakra control, orochimaru didn't even GET to put his hands together... It was a paralysis genjutsu, and before he could even clasp his hands together he got them cut off..

And that argument can't work.. we don't know why orochimaru couldn't get sage mode....It could very well be he didn't have the proper chakra reserves for it.. you can't jump to that conclusion.. considering Orochimaru was a master of ninjutsu i doubt it..

dude itachi knew fully about jirayas abilities and himself said he would not lose but both of them will die and itachi just kept getting weaker
