I saw a theory of "Jack" being Luffy's mom. It was pretty good.

If i had to take a guess then i'd go with Jack being someone we haven't seen yet.

I don't really know who this "Jack" is but the guy mentioning him reminds me of Blueno. That hair shaped like horns on each side of his head.
