Itachi did use Water Release: Water Fang Bullet at one point, though.

I'm sure he knew more Water Jutsu's, But unlike Kisame/2nd hokage and other high level water users, Maybe Itachi needed water to use them, He never really fought near a Good size water source so he couldn't use them.

The dude got a Giant A$$ Fireball, Genjutsu, Good at shuriken and Taijutsu, and in case of emergency he got Tsukuyomi, Amaterasu, and Susano. I think Itachi was pretty satisfied with his Arsenal

Maybe he knows more Suiton jutsus, but he hasn't had to use them.

I say that is pretty well-rounded of him to include some Suiton jutsu in his arsenal. It is good to know he CAN use them. Now if he is proficient like the pros is another thing.

from what we've seen of him he's probably better than mizukage and kisame combined at them. kishi makes itachi invincible
