Compared to other shinobi, Itachi's stamina is lower.
However, this doesn't mean that Itachi's stamina is something to be scoffed at. When push comes to shove, Itachi can milk out his stamina to finish a fight:
Multiple Genjutsu Battles
Non-Stop Taijutsu/Shuriken battle with a Kage-Level opponent
Tsukuyomi (Chakra-Taxing MS technique)
Oh wait... This was just one Giant Tsukuyomi, which means he spent all of that chakra on a taxing MS technique to keep Sasuke in check.
All of what I'm posting next takes place after he took a shuriken to the thigh.
Immediately makes a beyond-human jump with a giant wound in his leg. How's that for stamina?
Fire Style Great Fireball Jutsu
A second Fire Style: Grand Fireball
A giant Amaterasu...
...And just keeps spamming it.
Dying, but makes yet another inhuman jump
V3 Susano'o...
...Sustained long enough to fight Orochimaru's Hydra Mode and stalk Sasuke.
And after all that, still enough chakra left to transfer MS to Sasuke.
ALL of this done while he was nearly on his deathbed. MS techniques are known to be some of the most taxing on the chakra, and yet he used all of them.
In a hypothetical 1 on 1 battle, Itachi has more than enough chakra on his deathbed to contend with nearly any character. After all, that's exactly what he did against a Kage-level Sasuke. Obito even flat out stated that Itachi was even holding back in that fight, and could have killed Sasuke any time.
Don't use Itachi's stamina as an excuse.
