~Itachi's Character Development~
The majority of the character development that Itachi Uchiha went through which was shown on-panel was during his Edo Phase. I'd just like to detail some of it. Feel free to read and comment (or not read/don't post and just move on to a different thread).
Acknowledging Himself
Itachi: "You're very different from me, but at the same time I can sympathize with you. In the end, you were a spy as well and you lived in the same world of lies in which I used to live.
I also couldn't understand who I was. Now I feel that maybe... knowing who I actually am is the key to reach perfection. Because that means knowing what I can and cannot do."
Kabuto: "That's what a loser would say. Isn't acknowledging what you can't do the same as giving up?"
Itachi: "No, it means to forgive yourself for what you aren't able to do. Your comrades are there to make up for what you cannot do. And to prevent you from ignoring things that you actually might have been able to do.
If you want to know who you are, you have to look at your real self and acknowledge what you see. I wasn't able to do it... I lied to others and deceived even myself with my own lies.
The ones who aren't able to acknowledge their own selves are bound to fail. Like I did in the past."
Itachi acknowledged that living a facade isn't ideal. As a human being, one has to know their limits in order to avoid taking on more than they can realistically handle.
He doesn't feel the need to live a lie anymore and can accept that he doesn't have to take on every burden. He doesn't need to feel disappointed due to not achieving everything alone.
Closure with Brother
Itachi: "Even though all I wanted was for you to walk the right path. Before I died, I tried to lead you down that path of righteousness. I changed the signposts on that path with lies and my ocular powers."
Sasuke: "You just wanted me to follow your signposts? I don't care for such a path!!"
Itachi: "Yeah... you're right. You ought to decide your own journey."
Itachi: "I treated you like a child. I thought you needed my protection. I didn't trust your strength.
It may be that a perfect being does not exist at all in the world. Sometimes two who seem opposites are actually two sides of the same coin. They can only succeed when actually working together."
Itachi: "I always lies to you telling you to forgive me. I always kept you far away, with my own hands. I didn't want to involve you. If I had faced you from the start, tried to see things from your point of view and talked with you about the truth. But I failed, and no matter what I say now, it still won't reach you. That's why I'm finally going to say what I really think.
You don't have to forgive me. No matter what you decide to do from now on, I will love you forever."
Itachi admits that he was too over-protective of Sasuke.
He's no longer afraid to let Sasuke go it alone and lets him know (via the gesture of their foreheads touching and his words) that he's free to do as he pleases and regardless of everything, he'll always adore him.
He put his faith in Sasuke and acknowledged him as an equal.
Redemption of Sins

"It doesn't matter who... whoever it was, they're a hero that protected the shinobi world!"
The guy succeeded in both aiding the Alliance and allowing the deceased to rest once again.
Tl;dr: Itachi's character development was pretty interesting and enjoyable to see.
