LOL genjutsu won't work on goku...........he is mentally too strong to get broken in a genjutsu and he knows when he is fighting a real person or a copy so itachi making him fight someone else in his genjutsu won't have any effect.
Hell even Babidi could not control vegeta with his mind control and we all know when goku takes something serious no one can change his mind.
Goku at the start of the fight will just move with super sonic speeds to just kill itachi and blow off his head with just a punch.

IF goku wasn't a big softy who hates killing, then he would neg diff ITachi no sweat, but he would be like, "oh this fodder wants to hurt me I'll let him get a blow in beforing knocking him out just with my ki---, in the meantime he is already trapped in a genjutsu and ITachi makes him pass out.

goku overloaded yakon and killed him. he tried to kill 19 and cell. he tried to kill kid boo. the whole "goku's merciful" thing IMO vanished with freeza once he saw the error of letting people go who will never change.
the reading of emotions Im assuming is something that came with his training to control super saiyan on yardrat.
which is why he was never showing mercy anymore because he could look into that opponent and see just evil. if he saw itachis heart he'd see someone whos like vegeta. not completely evil but evil enough that goku will not hesitate to knock him out.

goku's speed is far faster than itachis thought process. so its more like
