Depends if Zabuza fights like his first fight against Kakashi or the second. If he fights like against Kakashi, Itachi will win. Since Zabuza is the main threat, he could take him out with a genjutsu. Haku could surely try to awake him but i think he lacks of experience fighting sharingan users, so Itachi could take advantage of this to quickly finish Zabuza living Haku alone. A 2tomoes Sasuke was able to read Haku's speed(even if he was slowing down at that time), so i think 3tomoes could read it efficiently and knowing Itachi's genius, he will surely win.
If we're talking about the second configuration, i see Zabuza and Haku winning. Since in the second configuration, Zabuza close his eyes and he is the only one who could fight properly in the mist. Haku can also though. With the mist, it restrict also the field of vision, so genjutsus are really difficult to cast. Just taking down Zabuza in the mist will be hard as hell. If you add Haku who could surprise him anytime with his cristal ice mirrors and speed, it would be really impossible. I don't see how he could find Zabuza. He doesn't have suitable summons to catch him like Kakashi had, and Zabuza can actually play with him by throwing kunais or spamming mizu bunshins to slow his reaction time and with Hakus help, for me they win.
It's fair to say that after his first experience with the sharingan, Zabuza will not do the same error again. So i actually think that when he will face Itachi, he will fight in the second configuration, and if he does that, i think Zabuza and Haku will win
