Orochimaru and itachi never had proper fight the first in counter orochimaru only was trying to kidnap his body why would he try to harm the body he wants so dearly the other in counter it was hydra vs Susanno and it was a tie until tht sword started sealing it. Itachi kept cutting off heads but they kept growing back and the hydra had the Susanno in a vice grip.

Only Orochimaru can win if he backs himself up with strong Edos. Otherwise all of them get stomped. Tsukuyomi cannot be avoid by one of them, and if one tries to avoid eye contact, his chance to avoid Amaterasu falls down to zero even with reflexes and formidable speed. If we look away from the Mangekyo Sharingan, Jiraiya would stand the best chances in fighting Itachi. If Jiraiya manages to obtain the Senninmode during their fight, he would win, considering the Mangekyo is restricted.
