The earlier version clearly sucked compared to this one, so it's meaningless to Itachi. If it wasn't, then Oro would have gone back and used Hashi to beat Itachi. That he never tried again is telling... he knew beating Itachi was "an impossible dream".
kabuto wasnt all out either as he had sasuke to worry about, no edos available and no intent to hurt sasuke. if he could have gone all outkabuto would sense his intent and be ready before itachi ever stepped into the cave. kabuto explicitly says "hey you cant even injure me cos i regenerate instantly". and not having intent to kill isnt some massive handicap. kisame fought bee just fine without being allowed to kill him
Kabuto could go all out v.s Itachi, he had to watch out for 2 guys who explicitly couldn't try to kill him, and absurd advantage.

You've had it explained a dozen times why body shed does not answer Ameratasu, you are impressing nobody by ignoring it for the 20th time. Nor can Kabuto stop an etheral sword, or Shi Sui's eye, or Izanami (as we saw).
