Anyway in the fight with hashirama, it was mito and hashirama vs madara. Alot of people still think it was a 1 vs 1 situation. Its true madara had control of the fox, but hashirama wrestled its control from him and hashirama gained an even greater advantage. If you havent realised history only tells the result and never what really happened. Example, history would say naruto defeated pein. It will never mention the fact that pein was already weakened, still defeated naruto the moment he pinned him to the ground. his intention was to capture, the fox intervened (hinata) and nagato died to 0 chakra after restoring the life he has taken.
Similarly history would say sasuke defeated oro when he know what really happened. Same with itachi vs sasuke. The fight between hashirama and madara is till covered in mystery.
Anyway its clear that madara and itachi's fighting style is very different. Madara is the powerful of the two, but itachi is more skilful and technical. Different fighting styles yields different results.
Back on topic; hashirama isnt just a mokouton user but also a suiton and doton user, meaining although itachi's katon > mokouton. He can neutralise itachi's katon with suiton. Saying that, not even amaterasu would be put out by suiton. From the techniques shown from both, its clear itachi would win. If we were to go by what we have seen, excluding hype, it would be edo hashirama (the one that fought sarutobi) vs a sick itachi. I need not tell you that even a sick itachi died undefeated. He will beat edo hashirama. If we were to say hashirama vs healthy itachi, the answer is we dont know
