kabuto by far, he can blind itachi, hes WAAY faster than itachi even so much to the point where he easily has enough speed to dodge anything itachi throws at him, he can crush itachi, he can use his sound genjutsu and instantly and the fight,itachi can't fight op enemy's without allies this is a fact, which is why hes so weak, plus even if he could use izanami with out a partner backing him up he won't be able to activate it in time, kabuto in this mode is better than itachi in every way whether itachi is edo and especially if hes alive(that would be straight torture)

you intentionally made this a stomp for kabuto surely. theresnothing itachi could ever do to stop him. kabuto claps his hands together and summons 32 immortal zombies including madara uchiha. itachi when alive and healthy is good for 2 or 3 MS moves in one day then hes finished stamina wise as shown in part 1. using 3 MS moves in a row when sick KILLS him. if healthy it would kill him but slower.
kabuto is completely immune to all basic genjutsu. especially with 30m before itachi gets in genjutsu range. tayuya has no limitations to her range so he can easily trap itachi at this kind of distance. if itachi tries susano + totsuka, kabuto need only turn to water and let it pass right trough him. it needs to pierce you to seal you so if kabutos water there aint nothing to pierce.
madara is immune to tsukiyomi and can break other edos out of basic genjutsu
mu is itachis worst nightmare as he cant see him, period.
and kabuto has near unlimited snake summons to throw into the mix.

if alive itachi uses susano, death will follow soon after. totsuka is useless when kabuto is in water mode. he avoided susano arrow. shooting something with a bow is much faster than someone swinging a sword. a normal arrow can punch through metal armour and send a man flying back. a sword slash may only spill their guts or glance off their mail

kabuto explicitly said he wasnt going for any damaging hits on sasuke since hes a guinea pig, and did not have his 32 edo tensei summons. sasuke explicitly said they were getting their asses beat despite outnumbering kabuto

U underestimate Itachi.

Even if Kabuto could summon edo's Madara can easily escape from his control.
