Also - if Tsunade has Byakogou activated and gets lit on Amaterasu, the two techniques would more or less stalemate since Tsunade would constantly be getting burned but at the same time regenerating her cells. Jiraiya can seal away the flames on Tsunade's body with his fire sealing scroll, and then she regenerates her final burns and remains unharmed (Jiraiya can create a kage bunshin for this task while he continues to do battle). Amaterasu doesn't one shot her. And, considering her ability to manipulate the electric signals in the nerves, she could potentially shut down her nervous system so she wouldn't feel any pain while she's on fire.

Kage bunshins.
Itachi cant spam his abilities as shown in the manga. They are to taxing on him.
Jiraiya has huge chakra reserves and could make many bunshins, which would make Itachi unable to try his luck and amaterasu many, since he cant spam it.

With SM he can sense the danger coming so dodging would work too.

Gamaken with his shield could help out as well.

Edo tenseis could block.

Katsuyu can handle it, with splitting up.

Manda/Manda 2 can shed his skin and block it.

Rashumon to block it.

Tsunade Byakugo.

There are plenty more ways to deal with it.
