Pein doesn't "fodderize" J-man. Pein would probably win but again I wouldn't say he "fodderizes" him. Pein himself said if Jman knew what Naruto knew he would of lost, but I slightly doubt that. Jman's arsenal can counter almost anything.

As for a 1v1 against Itachi, it's a toss up. Jman doesn't have an answer for Amaterasu exactly but Itachi doesn't exactly have an answer for Jmans arsenal. If frog song gets activated it's over though, but that requires a lot of prep.

You assume Jman would just stand there though. When he could do multiple jutsus to at least negate Amaterasu. And I "soloed" my own post because I know it wouldn't just be 1 or 2 attacks to end the fight. I'm looking at it from multiple scenarios. And Amaterasu requires prep too, even so Sasuke dealt with.
