Favour itachi more than sasuke though because so far itachi is not only the one that kabuto fears out of the 2 brothers and is has been trying to get sasuke on his side since the beginning but also itachi has faired and in fact bested kabuto thus far.
Everything kabuto has thrown so far has been countered. Itachi saw though his technique and protected sasuke, but also somewhat read what kabuto was thinking and its due to this that kabuto praised him again. Secondly whilst itachi has saw though everything kabuto has shown, i cannot say the same for kabuto. He was out witted and due to this lost a horn.
Believe if it came to full blown fight between edo itachi v sm kabuto itachi will win because he has not only shown us that he has countered everything kabuto has shown he has also out smarted him. Ill give you that kabuto has clearly done his homework about the uchiha and their abilities, but also due to his enhancements and sm ability will be able to sense amaterasu and evade it, BUT you see itachi has shown us the ability to withhold from using amaterasu and infact delay the use of amaterasu even if there are clear sighs that he was about to use it.
Example naagto sense'd it and we all sigh clear sighs from itachi's ms design to blood pouring from his eyes;

But he didnt use amaterasu, what he did was to activate shisui's eye and that confused nagato who thought he was about to use amaterasu;

After that did itachi use amaterasu on nagato's summoned. Naruto was confused and thought itachi targeted him when he said he missed, but itachi has been brought back to his senses and never aimed it at naruto;

Also said he cannot be put in genjutsu because he has been through every difficulty to evade sharigan genjutsu, but you see genjutsu itself requires high intelligence and precise chakra control and many people who have these two attributes can use genjutsu without the sharigan although a kg like the shairgan does help. But you see itachi's genjutsu prowess isnt stemmed from his sharigan alone, he excels intellectually as well as having one of the best chakra control in the series, add to this he has said basically said that he doesnt need his sharigan to cast genjutsu

, he can no doubt use a non sharigan genjutsu to briefly elude/out manoeuvre kabuto like has already done when he got sasuke's sword from him.
Add on top of this itachi was still able to use susano in kabuto's rage technique but also saw through it, he has again bested kabuto.
Ems sasuke is most likely stronger than kabuto but so far he unlike itachi hasnt faired too well against kabuto. He hwas missed 2 attacks in a susano arrow and chidori sphere. He cannot waste his chakra on such pointless attacks. Add to this unlike itachi, all of sasuke's genjutsu prowess has come from his sharigan, he definitely cannot put kabuto in one. He also couldnt keep susano activated during kaburto's rage attack and if thats the case kabuto could just beat sasuke.
