Amaterasu isn't a problem as he can most likely seal it, because Jiraiya could and he was his sensei

Itachi has shit stamina, while Minato can fight all day and still be in prime condition

Itachi loses his eyesight with one or two MS abilities, Minato would smoke him out with FTG and his superior shunshin
