Considering Deidaras long-range skills he should be able to win against Kisame with med-difficulty. Sasori, Kakuzu and Hidan would be enough for Itachi. Itachis stamina is too low to take on all of them.

kisame is fourth strongest akatsuki member so deidara never beat kisame with that much stamina. For example you see how samehada absorb explosion when tenten(please dont laught of me xD) attack him with it. I mean c1 and c2 kisame can take down easy, and deidara doesnt even have a chance use c4 when he been already dead.
Now for itachi. Hes stamina sick is 2.5, healthy he probably at 3.5 like kakashi but hes uchiha unlike kakashi, his stamina would drain slover. Susanoo + intelligense can hold a little bit three akatsukis when kisame finish off deidara. But the first itachi would fight against deidara and hidan and finishes them quockly. So then be 2 vs 2.

Team 2 win but i'm not agree when you said that Sasori > Itachi.

Itachi can easily detect his heart with sharingan and focus on it to use amatarasu.If Sasori use his transfert jutsu while getting hit,not only sasori's soul have to move but his heart too.So while his heart is moving Itachi amaterasu again .Plus, he has enough time to keep yata mirror and susanoo activate.

Lol? Samehada never absorbed any explosion. Samehada can only absorb chakra, not pure physical forces like Gais Noon Tiger or explosions.

sasori is itachis worst nightmare so he can pretty much deal with him for as long as possible. then deidara walks in with C4 and C0 after telling hidan and kakuzu to run for it while kakuzu leaves two hearts to help sasori. deidara dies taking sasori itachi and kisame with him.

hidan and kakuzu go grab a beer.
