Kakuzu has 5chakra system, so even if one of them got caught in a genjutsu, with the others he could still fight and even disturb the chakra of the one who get caught. So genjutsu is useless. With his doton defense, that makes physical attacks and ninjutsu pretty much useless(except some exceptions), and not even sure if totsuka could go through it(stronger than diamond itself like databook says). But with Amaterasu, Itachi has a chance to finish him.
Kakuzu and Hidan have great combos, and without the sharingan and great reflexes you can only difficultly keep up. Hidan even said Kakashi was the first one ever who managed to avoid their combos. So i see Kisame dying. Itachi has low stamina and together(hidan+Kakuzu and his monsters) they are able to overwhelm Itachi with power and win. I think in term of combos attacks, Hidan and Kakuzu are the best in all Akatsuki after Pain.
