Itachi doesnt need sage mode. Sage mode is probably a power that allows non uchihas to stand possibly toe to toe with regular 3 tomeo uchiha. Itachi transcends the regular uchiha he solos regardless of sagemode or not. And with his ms powers sage mode fodders are well fodder.
