1. Itachi was an EDO (He would have died several times, don't forget he was cutted in a half 2 times)
This is wrong. Itachi being an edo could fight in a way, where he was careless about being killed. You think he had acted the same way, as a none-edo? Fool.
Also Kabuto was happy that he was an edo. Kabuto wanted to capture him along with Sasuke, so he could regain control over him. If he wasn't an edo, it had been a harder fight for Kabuto. U_U
2. Itachi had sasuke ( Sasuke saved itachi when he used an amaterasu defence and when he helped him to break out sound genjutsu)
Again, Itachi could break out of the genjutsu using Amaterasu on himself, for then to remove it afterwards, though that would require more chakra. Don't forget he could move his head freely. Also if this was a fight to the death, Itachi would win easily using his legendary weapons. What could Kabuto do against infinite Yata mirror? Right he wouldn't do a damn thing.
3. Kabuto didn't want to kill itachi, he wanted to putt a kunai in his neck so itachi would obbey him. (Itachi holding back too, i know, but he had much more advantages in this fight)
Kabuto didn't hold back since he was an edo, fool, you even mentioned he killed him a few times... Sigh..
4. THE MOST IMPORTANT FACT: KABUTO DIDN'T USE EDO TENSEI
Do you really think itachi can solo:
- Muu
- 3rd raikage
- Asuma
- Kimimaro
- Dan
- 4th kazekage
- EDO MADARA (PART OF DSM KABUTO'S PRIME ARSENAL, THIS IS UNDENIABLE)
- ZABUZA (MIST + SILLENT KILLING =CHOPPING HEADS)
- TROLLKAGE

MAYBE, YOU COULD SAY:
EDO itachi > NO EDO TENSEI kabuto (that's a fair affirmation, but prime kabuto > itachi)
Actually none of the above mentioned can touch Itachi, when using Yata mirror. Along with his sealing sword, edo Itachi would actually put up a good fight. Besides if Kabuto summoned edo Madara, of course Itachi would lose. But you just needed that argument, since you know that Itachi > DSM Kabuto (no summons). Invalid thread, is invalid.
Also Kabuto wouldn't be able to control this many edo's at once. Most of them would just be on auto-attack, meaning they are easy to seal, since they wouldn't dodge an attack unknown to them, like the yata sword. Say trollkage, would just turn to water, he would think, and live, or actually as an edo you wouldn't even care being stabbed. So it's a foolish argument. Only Madara had free control, Kabuto couldn't control him anyway. And of course none beats Madara... Silly, it's more likely that Madara would release edo tensei and kill Kabuto, so none could ever stop the jutsu..
And of course the most important argument, WHY DIDN*T KABUTO USE EDO TENSEI? CAUSE HE IS AN ARROGANT FOOL, WHO WAS TRICKED BY THE MORE BRILLIANT SHINOBI.
