There has been much talk and even more misconception about SM Kabuto "defeating" Itachi. The assumptions are as follows: Itachi required Sasuke's help to defeat Kabuto under any reasonable circumstances, and that Kabuto overpowered an unwilling Itachi multiple times.
I'm tired of reading this nonsense, so I'm here to attempt to shed some light on what really happened.
First off, notice that Itachi uses his left eye for genjutsu. It's throughout the entire manga - look it up.
Second, notice that whenever Itachi is struck by an attack, his left eye is still intact, while the right eye socket is blank.
This isn't a coincidence. This is an intentional invitation from Kishi to put two and two together.
We know how Izanami works:
We know that both subjects need to replicate the same bodily sensation twice, and that the user needs to record the sensations. Notice BODILY sensations, not necessarily external movement. This can include chakra molding, ranged attacks, genjutsu, etc...
In order to create situations of activating Izanami, one must experience a wide variety of sensations and record them. The more instances you record, the more opportunities there are for events to happen twice and thus allowing you to use Izanami.
We know that Itachi mentions that he's working on a plan, and that it will take time
We know that Itachi has incredible ability to predict events and reactions. Look throughout the manga, but here is one very relevant example:
And we know that Itachi always has a plan, and he's very good at subterfuge and deception. I don't need to provide examples to an audience that has read the manga, but here is one:
It has also been confirmed multiple times that Itachi recorded events that weren't even stated as Izanami save points in the manga:

What does this all mean? It means that Itachi was planning on being struck multiple times. This is the only logical explanation to the events which take place (example:
which has no logical explanation otherwise; we know Izanami doesn't work like that), which also stay true to Itachi's personality, his portrayal, his power, and the numerous hints dropped by the manga. He wasn't outplayed by Kabuto; rather, Kabuto fell nicely into Itachi's trap.
It's a little concerning to me that I even feel compelled to point out what obviously happened. What I'm saying should be apparent to everyone without a step-by-step overview. But sadly, this is not the case.
If Itachi was playing hardball, Kabuto would have been quickly put down - this is why Itachi stressed to Sasuke not to harm Kabuto multiple times.

NOTE: It is also unfortunate that some people assume the easiest way to deal with a situation is the only way to deal with a situation. For example, Itachi and Sasuke helping each other break genjutsu means that they both required each other's help to break it. This doesn't hold true in real life, and this doesn't hold true in the manga either.
